Preparing for Passover
It’s that time of the year, Passover is starting tonight at sundown, so I’ve got to do my homework for this year. Since Megan has switched to being a vegetarian, we’ve been eating a lot more veggies and also just healthier stuff in general, so I think it should be easier this year.
I want to get my hands on some kosher for Passover Coca Cola, but I’ve never seen it in Austin - I’ll just have to settle for the Mexican stuff. While I am doing my shopping, I am going to have to get all the fixins for Apple Matzah Kugel (I eat this stuff everyday for breakfast and maybe dessert). Might have to make a batch of this charoset too…
I’ll be doing meal planning for this week, I figure we’ll do some soup(s) and stuff like that, I might attempt latkes for one night. Matzah Pizza will be a fixture, as usual. While searching (on a whim) for Tex-Mex Passover recipes, I came across this story about how many of the Mexicans of Nuevo Leon and Monterrey are actually decended from Sephardic Jews that came over during the 1600s. There is a neat recipe there for pan de semita (literally Semitic Bread) that we might have to try too. (And I will have to find/think of a good kosher for Passover Tex Mex recipe)
